Description
The advantage of this machine is TIME! With its refrigeration cycle, you don't have to wait too long to bring the chocolate temperature down after melting it before going up again (Tempering Curve Process).
Aura delivers the benefits of FBM's continuous tempering technology to tabletop machines.
The continuous tempering cycle in Aura is controlled by a custom–programmed dedicated CPU that monitors and adjusts heating and cooling automatically within a very narrow range based on the set melting and tempering points. The working bowl is heated by thermoelectric induction, and the tempering pipe is cooled directly by the refrigerant gas, delivering fast response times, precise control, and reduced energy consumption.
The auger in the Aura's tempering pipe reverses automatically to empty it, reducing the time required to restart the tempering cycle or change Chocolate. An optional upgrade to the tempering pipe assembly enables the removal of the tempering screw pump to clean the machine when changing chocolates completely.

I was slightly concerned because it was my first time ordering from here. However, my shipment arrived a week before the expected date and was in perfect condition! The flour itself is great and I’ve made some amazing Viennoiseries with it. The dough comes out highly extensible and supple. I do wish the shipping fees were a bit lower as I’d originally planned on buying 2 bags but it was too expensive even with the 50% discount on the second bag. I’m definitely ordering again from them though!.
